Fresh Gazpacho Andaluz

Tomato season is finally here! Ben and I like to say that the best parts of summer are the garden fresh tomatoes and basil. So… If you’re looking for something to do with all those yummy tomatoes from your garden or your CSA, here is the perfect recipe.

Fresh Gazpacho Andaluz

Serves 4 as a side, 2 as a main course

This is a perfect dish to make a day early because it’s tastiest after it has been in the fridge over night. But, if you don’t have time to make it early, just throw it in the freezer for an hour before serving.


4 or 5 medium tomatoes

1 cucumber

1 bell pepper

1 small onion

2 garlic cloves

1 jalapeño pepper

1 tsp. salt

1 slice of whole wheat bread

1 handful of fresh basil

2 Tbsp. balsamic vinegar

Fresh ground black pepper

Fresh Gazpacho Andaluz


Dice half of your tomatoes, ½ cucumber, and ½ onion and place in a large mixing bowl. Reserve a few pretty slices of cucumber and a few sprigs of basil for garnish, and then throw the rest of your ingredients into your food processor and blend until mostly smooth. Combine with the chopped vegetables in the mixing bowl, taste test, then chill in the fridge (or the freezer if you’re in a hurry!).

Garnish with cucumber slices and basil.
