Smoky Sweet Potato Soup

This is an awesome recipe for a quick lunch. Just roast your sweet potato beforehand and then you can produce this whole recipe in about ten minutes.

Smoky Sweet Potato Soup

vegan, serves 2



1 sweet potato

1 cup garbanzo beans

½ cup vegetable stock

½ cup almond milk

zest and juice of 1 lime

½ tsp. salt

½ tsp. chipotle

¼ cup nutritional yeast

Fresh black pepper

Dash of cayenne


Diced avocado

Crushed tortilla chips

Dash of cayenne


Preheat oven to 425 degrees.
 Bake sweet potato until tender, about 45 minutes. Let cool. Remove skin.

Heat vegetable stock in a soup pot. Add sweet potato and garbanzo beans to the pot and blend until smooth (I used my immersion blender straight in the pot, but it would work just fine to blend and then add them to the pot). Fold in the rest of your ingredients and bring to a simmer for just a moment before serving.

Garnish with avocado, tortilla chips, and a pinch of cayenne.
