I’ve been craving some kind spicy peanut dish recently, and this recipe proved to be very satisfying. So quick and easy! Perfect for a quick, nutritious, filling lunch.

Spicy Peanut Rice Bowl
vegan, serves 2
Ingredients:
A few handfuls of spring greens mix
½ avocado, sliced
1 cup cooked brown rice
½ pound extra firm tofu, diced into ½ inch cubes
Fresh black pepper
Spicy Peanut Sauce:
3 Tbsp. Peanut Butter
3 tsp. Soy Sauce
3 tsp. maple syrup
Juice of 1 lime
Dash of bitters
¼ tsp. Ketchup
½ cup water
Dash of cayenne

Directions:
Blend all of the peanut sauce ingredients together until smooth.
In a medium saucier pan over medium heat, toss your cubed tofu with a few spoonfuls of the peanut sauce. Let cook for about 8 minutes, until the tofu is starting to fry a bit. Add the rice and the rest of the peanut sauce and cook for 5 more minutes.
Meanwhile, get your salad ready. Greens on the bottom, avocado swirled on the side.
Top with a scoop of the tofu rice and garnish with crushed peanuts, black pepper, and a dash of cayenne.
